Beef mince’s fattier and tastier cousin, it makes an outstanding shepherds pie or consider making homemade lamb burgers. Crush some garlic, chop a little rosemary, and add a little dab of redcurrant jelly for sweetness. Bind it all with an beaten egg and a few breadcrumbs. Mix throughly by hand and form into patties. Chill, then fry or grill over a hot heat. Add a sauce of mint and cucumber with natural yogurt, and serve in a bun or with boiled new potatoes.
