Description
The word chump means the “thick end of something” and so it is, on an organic lamb carcase its where the double loin meets the top of the leg. It’s a wider part of the leg, and you can cut it off separately as a rump of lamb, or we slice it to make chump chops. Cook pink, in a hot pan, sprinkle with salt while cooking and scrape the pan juices with a little stock and melt a teaspoon of redcurrant jelly into it to make a sauce to serve.
